Andaz Tavern serves refined European provincial cuisine prepared with seasonal Japanese ingredients. The menu reflects uncomplicated and wholesome dishes with simple flavours. Dramatically perched on the 51st floor with floor-to-ceiling glass windows, Andaz Tavern offers stunning views of the city over the Imperial Palace.


Andaz Tavern concept is based on country side cooking from various regions of Europe. Traveling through European Provinces, one can find a wonderful variety of flavors and regional delicatessen. We are trying to bring this provincial flair to Tokyo, by utilizing the wonderful quality and variety of Japanese products. 

We aim to provide the best of Japanese produce, paired with unusual and interesting imported products, with emphasis on craftsmanship. Artisan Cheeses, natural ciders and whole baked Yamanashi chickens are good examples. Prepared in the most authentic ways of European cooking it adds a unique dining experience to the buzzing capital city of Japan.

 

Executive Sous Chef - Gregor Streun

Born in the Franconia region of Bavaria, Germany, Chef Gregor Streun discovered his passion for cooking at an early age, beginning his classic apprenticeship at the age of 16 in the Michelin-starred hotel “Der Schafhof” in his home region.  

In 2010, Chef Gregor obtained his culinary master’s degree at the college of hotel management in Heidelberg. He then expanded his experience outside of Germany by joining the historic five-star Grand Hotel Kronenhof in Switzerland. In 2012, he joined Park Hyatt Shanghai as chef de cuisine of the Dining Room, thus beginning his career with Hyatt.

In 2014, Chef Gregor joined the opening team of Andaz Tokyo as executive sous chef, overlooking various areas of the hotel’s culinary operations, in particular the signature restaurant Andaz Tavern, where he prepares European provincial cuisine using a variety of seasonal Japanese ingredients.

Via thoughtful sourcing and learning constantly about the abundant availability of premium products in Japan, Chef Gregor showcases his extraordinary culinary skills and inspires and delights guests with authentic European dining experiences.
